BBQ'ing...

So, a comment from the Hermantor on my last post got me to thinking how different BBQ is in the different parts of the country. I mean, it's not even close when you say BBQ you can get 2 completely different things sometimes... kinda funny. I'm from Ohio (born and raised - lived there for 27 years) before moving to Huntsvegas. When we say BBQ up in Ohio - it's something that you do - not something that you eat. I mean, of course you eat BBQ, but BBQ is more the act of grilling out then the food itself. Down here in 'Bama - it's the food. When i say BBQ - that general means I about to have some pulled pork, but can mean that I'm having some kind of meat that's been cooked on a smoker. Up in Ohio if I were to order a BBQ sandwich, I'd get a piece of pork on a bun with a ketchup based BBQ sauce, that may or may not have been grilled. If you were to order a BBQ sandwich down here you will get a pulled pork sandwich that was slow cooked in a smoker and then tossed lightly in a BBQ sauce/wash (vinegar ketchup base) and served on a bun with some vinegar slaw. It's all different. My FuddyDuddy has really gotten into the smoking and BBQ'ing lately and is getting really good at it. He has really nailed his rib recipe lately too, they are fall-apart, melt in your mouth good! mmmm, sticky finger ribs. The best thing that he cooks (as far as I'm concerned) is chicken, I love his smoked chicken and we serve that with white bbq sauce. I think the white bbq sauce is a 'bama thing, I haven't seen it anywhere else - if you haven't tried it - YOU MUST. It is heaven! It's wonderful on smoked or grilled chicken, I'll swear by it. MMMmmm. Anyway, what's BBQ to you? Here's a few pics of our new smoker and our latest efforts... whatcha think?

Thanks for the link-back ! Anyway, you really answered my question about the local sauce preferrences,and added a few more things I didn't know. I'm going to look for some of the "Bob Gibson White sauce" up here in Hoosierland, and if I can't find it, I'll probably order a 6 pack through their site. Thanks for that.
Your new smoker / cooker looks great. I have one Huge Hawg Roaster/Smoker that is trailer-mounted, and one of the upright smoking cabinets that were popular a decade ago. I think that even grilled veggies are better when smoked, just something very primal about those flavors.
Email me about Hubby's rib recipe, and I'll see if I can enhance it at all. Tell him my BBQ Sauces and techniques were the back-bone of my outdoor catering business,(20 years), and that I like to share !
